Our Chef David Mendes has worked in the finest restaurants and hotels in London and Tel Aviv. David is a graduate of the Tadmor Culinary Institute in Israel and VALRHONA Chocolate chef training course in the South of France.
About our Chef: David Mendes
After qualifying as a chef patissier in Israel, David’s first stop was Sheraton Tel Aviv, where his passion for the art of patisserie reached a new level. Next were two of the most famous Chef restaurants in Israel at the time: MESSA and ORCA. Experiencing the bustle and buzz of these two fine dining restaurant kitchens, along with their exquisite patisserie creations, only enhanced David’s desire to learn and experience a higher professional level.
Naturally, Europe was the next peak to climb. And what better place to start than London, a world city which is gradually transforming its food image to become one of the culinary centres of Europe. David’s paths through London’s finest establishments started in The Square, a well known 2 Michelin-starred restaurant led by Chef Philip Howard. After that came ZUMA and ROKA, the re-opening of the legendary SAVOY hotel and the delightful pastry shop COCO MAYA. Eager to learn more about chocolate and master the art of chocolate making, David has travelled to the south of France to VALRHONA, the source of finest of chocolates, to train in all aspects of chocolate making.
